Baby corn & Peas soup

Each time I eat out, I tend to order baby corn soup,I am really addicted to its rich and sweet taste..Finally one day I cracked the recipe and made it at home. It came out just as awesome as in the restaraunts..A simple to make and yet yummy soup. Preparation time : 20 minutes.

Serves 4
Ingredients :

  • 1 cup diced baby corn
  • 1/2 cup green peas
  • 4 cups milk
  • 2 green chillies
  • 1/2 inch ginger
  • 2 pods garlic
  • 1 tsp butter
  • salt and pepper to taste
For the topping :
  • small slices of baby corn, steamed.
  • coriander leaves
  • 2 tsp grated cheese.

How to make :

  • Steam ( and not boil ) the diced baby corn and green peas separately. Steaming retains the natural taste of veggies; and also ensures that they are not overly cooked.
  • Blend the steamed baby corn nicely.
  • Make a fine paste of ginger, chillies and garlic.
  • Now in a pan heat 1 tsp butter, and add paste of ginger, chillies and garlic, and fry for a while till the aroma comes.
  • Add the pureed baby corn to it.
  • Now add milk, salt to taste, and the steamed green peas.
  • Bring to a boil.
  • Garnish it with steamed slices of baby corn, grated cheese and coriander leaves.
  • Serve hot !
